Salmon Quiche: Bariatric Normal Diet Recipe

- 1 large onion finely chopped
- 2 short cut bacon rashers chopped
- 2 large zucchinis grated
- 1 medium carrot grated
- 1x 440g can pink salmon drained
- 1x 440g corn kernels drained
- 1cup self-raising flour
- 5 eggs lightly beaten
- 1/3cup light cheese grated
- Spray oil
Lightly grease a 23cm square slab pan. Line base with baking paper. Use spray oil in fry pan, add onion and bacon until soft. Combine onion, bacon with zucchini, carrot, flaked salmon, sifted flour, eggs and cheese. Mix well and pour into pan. Cook in moderate oven at 180°C for about 30 minutes or until golden brown. Serve cut into wedges with salad and garnish with lemon wedges.
