Dahl with Spinach: Bariatric Soft Diet Recipe
Dahl with spinach

- 2T sunflower oil
- 2 onions chopped
- 2 garlic cloves chopped
- 2t grated ginger
- 1 long green chilli finely chopped
- 1T mustard seeds
- 1t ground cumin
- 1T ground coriander
- 2t ground turmeric
- 1t garam masala
- 400g yellow split peas (rinsed and soaked overnight before using)
- 800g chopped tomatoes
- 3 cups chicken style liquid stock
- 1t castor sugar
- 100g baby spinach leaves
Heat oil in pan over medium heat until soft. Add garlic and ginger and cook for a further minute. Stir in spices then cook for 30 seconds until fragrant. Add peas, stock, tomatoes, sugar and 1.5 cups water. Bring to a simmer, then reduce heat to low and cook for 1-1.5hours, stirring occasionally, until peas are tender and dahl is thick and rich. Stir through spinach. Serve.
